The flashback at the end was so they could show that last shot of Galinda whispering into Elphaba's ear, which is a nod to the original musical poster. I thought it was a very nice touch and a very fitting last shot.

My thought is that, if they had to add a song, it should have been given to Fiyero. He has very little to actually do in part 2. A song with him sorting through his feelings for both Glinda & Elphaba, how he has changed, etc would have been much more interesting than either of the songs that were added.
