I agree with Stevie if red robin uses 90/10 and Applebee's uses 80/20 that almost halves the calories of the beef. It also accounts for the flavor difference.
I feel you need to test Red Robin again with a normal cheeseburger because Keep It Simple" burger, which is served without their signature seasoning. While Red Robin seasons most of its burgers and fries with its signature blend, the "Keep It Simple" burger is an option designed for those who want a plain, unseasoned beef patty.

Best burger I ever had was made by a butcher in his back yard. Prime ribeye trimmings, salt, pepper.. He insisted no condiments and he was right.
