Nice video - have ever encounter scanned docs or pDF with alternating background meaning it has some background. I can extract some text successfully but not in the region where there are shading or background

Please answer my question. I have a book in PDF file format. Each page contains an image with text inside the image. How can I extract the text into another file without breaking the text structure
