Fun fact! The reason lobster and crab went from being "poor people food" to being seen as a delicacy around the 1920s is because that's when rapid mass transit and refrigeration became widely available in America and Europe. When shellfish die, they begin decomposing almost immediately and so even a few hours passing between catching one and being able to cook and eat it would lead to it tasting sour and spoiled. However, with near instant refrigeration and ice available to dramatically slow that process, they stayed fresh longer. Since only high-end hotels, restaurants, and upper class homes had their own refrigerators for a long time, that was the only place you could get fresh seafood and thus it became seen as an upper-class food.
For the Echelon drink insted of calling it Arnold Palmer you could call it the "19th Hole" whitch is the clubhouse bar at the golf course.
