See notes at bottom for adjusting to different weights Onion marinade 8 onions 6 tbsp salt (** 1 tbsp per kilogram, for 8kg use 8 tbsp) 10 garlic cloves 3 tbsp black pepper 4 tbsp sumac 120ml (1/2 cup) lemon juice 20g (1 inch bundle) thyme Compound butter 250g butter 4 lemons (zested) 2 oranges (zested) 1 tbsp salt 2 tsp aleppo pepper flakes 2 tsp black pepper 2 tsp sumac 8 garlic cloves 20g (1 inch bundle) thyme Tray 4 lemons (from above step) 2 oranges (from above step) 1-2 onion quartered for turkey cavity 1-2 onions (or 8-10 shallots) sliced for gravy bundle of sage or thyme Gravy 250ml (1 cup) melted turkey fat or butter 1 cup all purpose flour (you may need 1-2 tbsp extra) 500ml (2 cups) turkey drippings including shallot/onion pieces 500-1000ml (2-4 cups) stock or water Salt to taste Adjusting the recipe for larger birds: - For a 9-12 kg turkey make 1.5X the marinade, use salt at 1 tbsp per kilogram - For larger turkeys you may double the marinade, however it is fine to use just 1.5x the marinade, but use the full amount of salt

Those cookbooks behind you show you're a man after my own heart. Both Start Here and The Food Lab <3 I do think that for the marinade, it might be worth leaving it uncovered in the fridge if possible, it'll let it dry out better.
