Regarding food racism and the prestige given to different cuisines - David Chang has a documentary series on Netflix called Ugly Delicious where he goes into all of this and it is fascinating and I highly recommend it. One of the most memorable parts for me is where there are talking about "Chinese takeaway allergies" and MSG allergies, whilst all of the people are eating bags of like Doritos and Cheetos / other highly MSG's snacks that just happen to be Americanised. I also recommend the article by Marianna Giusti talking to Alberto Grandi talking about the mythologising of "traditional" Italian cuisine. (You know the whole You Must Use Pig Jowl In Carbonara And It Has Always Been This Way thing).
"I don't know anything, except the thing I am currently researching" Honestly same and the way Max is just waiting to relate stuff back to the Conclave (current research), relatable.

As per usual Max is the most relatable and down to earth person in the food space on YouTube
The World Expo (World's Fair in the US), is still very much a thing and currently happening in Osaka (until October). It's not an American exclusive thing, and moves around the world. They were irregularly held until 2000 when a 5 year schedule appears to have been established.
10:33 agreed, Max. At some point after 35, music festivals become a chore that is hard to enjoy. Only the wealthy and the young can ever truly enjoy something like Coachella. Burning Man sounds like a living hell.
