Instead of just using the drippings, I recommend making a gravy. There’s a super easy way to turn the pan drippings into gravy: sift a couple of teaspoons of flour or cornstarch onto the fat layer on top, so the starch absorbs some fat, then whisk it into the rest of the liquid over heat until the liquid simmers. This will thicken the liquid with the starch. Adjust the salt or dilute it if it is too salty. Then strain it through a mesh strainer to remove clumps and particles. Add lemon juice or a flavorful vinegar to balance the fat. That’s all that’s needed to make a gravy from the drippings.
