My in-laws, who are Kuwaiti, also make this rice. They are of Persian descent. The migration of this dish around the gulf is very interesting.

in iran we call it "baghali polo" and most of the time we served it with fish

In Iran It's name "Baghali Polo" We Mostly Eat it With Fish or Lamb Muscle!!! In our tradition, we eat this rice with fish on the first night of spring and our new year !

One of my favourite meals. Timan bagila, but with lamb and lamb stock. My mum would first cook lamb shoulder cubes in water, a little garlic and turmeric until tender, then use the stock she made to part cook the rice before draining it and mixing in the beans, dill and meat and returning the mix to a pan with a little oil on the bottom, covering and cooking over a very low heat until the rice is cooked and a nice "حكاكه" is formed at the bottom.

My baghdadi neighbor made this for me once and I've been wanting to learn to make it ever since! Unfortunately she moved away, but now I can try this recipe. ❤ So excited!

Kind of Bittersweet for me. My late husband and I used to love to go to one particular restaurant that had a fabulous Dill rice dish on the menu. That was many years ago. Thanks for bringing back the memories and I will definitely try it.
