This recipe is very similar to how we marinade skewers in Lithuania too. Always funny seeing how cultures this far apart end up converging on such similar dishes.
We used to get amaba as a sachet, like tang or sherbet or in jars, I'm in Ireland now and I have to import it, but now I'll make it!!!! Shukran Habibi
Man I just ate and now I’m hungry again. The sauce and marinade look amazing ❤
Habibi!!!! AMBAAAAA 🇮🇶🇮🇶🇮🇶 it's in the roots

Unripe mango, vinegar, citric acid, and sumac. Wow. That is some sophisticated use of acid.
Honestly, I was surprised that I had most of these spices already. Usually these recipes feel out of reach for me, but it motivated me to get the missing spices and I'm going to grill them for my work bbq.
I love the use of a plate instead of plastic wrap
So, I found this recipe about a year ago and went on to prepare the amba sauce as indicated, in order to then proceed to prepare the chicken meat. Only, I used chicken wings and make use of an air fryer. And it turned out AMAZING. Totally love this recipe. So much so that today I'm cooking up the next batch of amba . I froze it in a flat sheet so that I can easily take the amount needed and keep it fresh. Also, only today I realized that I never added the lemon juice to the chicken, since the written recipe omits that point, as other commenters pointed out (and leading me to this realization). It still turned out great tho. Great recipe, great instruccional video.
