I don't know how Pizza Hut hasn't tried to cash in on the nostalgia people have for their dine-in restaurants.
The shrimp is not bankrupting Red Lobster. It's actually a small portion of their losses. I saw a video breaking it down.
As a single mom with a toddler/pre-schooler, I loved a chain restaurant with a kid price for salad bar. My son loved to make crouton ham and cheese itty bitty sandwiches.

Carrabba's is my go to "fancy" place to go eat. I love their entire menu and it feels so much more upscale.
Having grown up in a small town, there were two chain options. It was either Applebees or Montana Mikes. Being raised by an immigrant, single mother also meant I never stepped foot in either restaurant until well after I began to work at 18 years old. Stepping into an Olive Garden for the first time felt like walking into a fine dining establishment. Now at 29yo, I realize how wrong I was. It still amazes me to this day to hear so many people experience these restaurants growing up and the nostalgia they bring back.
