When Ego was a critic, he was rail thin because "if i dont love it, i dont swallow" but at the end, you can see his stomach is more round, to show he's actually started eating more.

The Anton Ego scene is the most important one because it shows how food can be a connection to your roots, Anton was poor when he was a kid and yet he enjoyed a "peasant" dish like ratatouille because his mother made it with love.
