It's not only kimchi that degrades BPA. I'm an A&E doctor with special interest in GI issues. The findings of the research mentioned here was done in 2007 that found Bacillus Pumilis, a strain of bacteria naturally present in kimchi, degraded BPA in a petri dish. More recent studies have now identified strains of bacteria found in other fermented foods, in particular, fermented soybean paste and other foods such as yogurt, and sauerkraut also degrade BPA and phthalates. The studies found that when a preparation of the probiotic lactobacillus reuteri was added to juice and teas packaged in BPA-containing cans, the probiotic reduced the concentration of the chemical in the beverages by at least 90% in one day.

This was known decades ago especially in bottled water and now were still here doing nothing about it. We need glass and metal like we use to have.
