They may not be dumb, but it could be argued that they just have some poor impulse control. Plus, considering they're pretty much indestructible, it would make sense that they don't really have a lot of inhibitions regarding their own safety, hence their recklessness.

I always figured that Minions were tech smart and dumb with everything else.
I've never found the minions dumb. I just see them as silly at times, but they are extremely hard workers. And loyal too.
Intelligence is knowing you should probably celebrate your bosses' 357th birthday. Wisdom is knowing you probably shouldn't open the curtain in Dracula's bedroom during the daytime.
My theory is that despite looking for evil people, the minions are instinctively good so when they make mistakes leading to the villains defeat itβs most likely intentional. It would explain why they stayed with gru aside from being kind
