You can see Nick's transition - at the beginning he was surprised by everything and there was a bit more distant. Towards the end of the video he seems more used to and open to the newness of it all and less hesitant about the food. I think its Mark Wiens effect - Mark has a way of helping us all be more open minded about other cultures, food, and ways of living.

Mark should be made food tourism ambassador of Thailand. He's done so much in terms of bringing global attention to Thailand. And I'm speaking this as an Indian, Mark is showing the world that Thailand is not just Bangkok, clubs, party, alcohol. It has so much food depth to it.
