If you read some of the books, Paul knows he cannot control what is happening. He actually encourages people to undermine him, and destroy his legend. Even his own mother conspires with people. He knows he opened pandora's box.
I think some of the Fremen also feel buyers remorse. Paul fulfils all of his promises to the Fremen when it comes to making Dune a green place with abundant water. But in response to that they feel theyβre losing their culture thats based on scarcity of resources and water. Not to mention that the changing environment of the Dune threatens to wipe out all the sand worms which are such an important part of Fremen culture.
I think the ocean scene might be a moment of disillusionment. The Fremen are staggered by the amount of water. One attempts to drink. "This water is poison!" he yells. Others drink and spit it out. Stilgar then realises that the prophecies about the Mahdi are true, but don't give the full picture. The Mahdi promises water, but the water (salt water) can kill you if you drink too much.
I'd bet the Chani thing is a Spice induced dream. Semi-prescient for her, foreshadowing for us.
