The reason Good Eats remains my favorite food show is because of how much science is involved.

The thing about mixing cocktails is those classics (e.g. negroni) are formulae. A negroni is a 1/1/1, when you increase one of those ingredients, you'll likely be going into mixed drink. But if you are keeping to those quantities but changing the type of ingredient (as long as it's in the same realm as the original) then you're still making that drink. Greg from How To Drink does an episode about this, though if I recall correctly, he used old fashioned as the example.

I was actually thinking the same thing when you said it and I was trying to figure out how to melt it. Corn casserole is very popular in the mid-west and the south. But the versions I have had are much more like a savory pudding and need to be scooped out, not cut like cornbread. Some cornbread does have some whole kernal corn in it, but not any creamed corn. The caller talking about baking contests is pretty wrong in most contests. Like Jessie said, State Fair food contests have some of the best food you have ever had!

I am a baker and a scientist, and I can confidently say that baking is NOT science. Baking uses scientific principles, but it doesn't generate them, so isn't science. Science also requires tremendous creativity, so the dichotomy is false. Baking is also far more flexible/creative than most people allow.
I love to cook and I love to bake. Two very different skill sets.
