This is more like an etiquette to freak the locals out. You two are fvkn hilarious.
Step X - Wasabi
They are right in the beginning though ...I always eat nigiri with my fingers ...and only put a tiny bit of shoyu on the tip of the fish. What I would add though, you always want to eat it fish-side down, so the fish comes into direct contact with your taste buds ...that way you get to enjoy all the complex, subtle flavors. Sugi did this correctly and deftly. ...Though a lot of people might've missed the little spin he did at least minute as he put the sushi in his mouth. THAT'S TALENT. If you turn the sushi too soon, you risk the rice falling off before it reaches your mouth. It definitely takes practice.

And here I thought I would be scolded for putting a little wasabi in my soy sauce
