I can spot Betelgeuse from my bedroom window in the late evening. I check it every night before I fall asleep, you know...just to make sure it's still there.

This is fascinating. A companion star can carve a wake in the gas as it orbits, like a boat moving through water, and that structure can stick around for years. Nerdy fun fact: Betelgeuse is a red supergiant, so its outer layers are so loosely bound that it is constantly shedding material into space.
