We’ll be going round the island eating some of the best Filipino food, and we’re starting in the North of Mindanao in the beautiful city of Cagayan de Oro. Humbaan ni Sio-Sio (Cogon Public Market) - We’re starting this Philippines street food tour in the Cogon Public Market, right in the heart of Cagayan de Oro. After walking around we found a legendary stall called Humbaan ni Sio-Sio for their famous Pork Humba. Price - 325 PHP ($5.54 US) for everything Nanol’s Sikwate & Putomaya (Cogon Public Market) - Next up we continued to the next stall to try Mindanao’s own hot chocolate and sticky rice. What a combination! Price - 55 PHP ($0.94 US) Malabang Muslim Restaurant - Still within the market we tried Maranao food, an ethnic Muslim group in the Philippines and the food was outstanding! I especially loved the piaparan chicken - chicken with shredded coconut. This meal was just a taste, as in the next episode we’ll be visiting Marawi City! Price - 190 PHP ($3.24 US) for everything ⁠ JC Eatery (https://maps.app.goo.gl/3aovCVfFUF5kPa1f9) - One of my favorite Filipino foods is kinilaw, raw marinated fish, but here they take it to the next level with tabon-tabon fruit. We also tried their famous tinola - fish soup. Proventriculus - Have you ever heard of this? It happens to be one of the most popular street foods in CDO. Price - 745 PHP ($12.69 US) for everything Pater Al-Kuwait - Our Cagayan de Oro food tour continues and next up we’re trying pater - rice packet in banana leaf. Price - 45 PHP ($0.77 US) per packet Ladao RM Station (https://maps.app.goo.gl/wJ7k9me9gyirye5P8) - Remember Me Soup has quite a story and I wasn’t going to miss it! When they drink the sikwate & putomaya... I love how the lady that prepares it looks intently at them to see if they enjoy it. Her expression really drives the point how much she cares about the experience she provides for others and truly demonstrates Filipino pride.

This is so cool! But i have to say that tabon tabon is not a souring agent. Its role in kinilaw is to remove any fishy sliminess and provides a slight astringency. It also has antibacterial properties that removes any potentially harmful nasties from raw fish. Still it's awesome that you guys highlight local legends!

I'm an American permanent resident of Mindanao. I've lived in the northeast of Mindanao for 5 yrs. As far as kinilaw, one of my fav Filipino dishes, we make it with raw tuna, instead of raw blue marlin, due to the raw marlin possibly having certain parasites, etc., that are not present in the tuna. Love the spicy kinilaw with coconut milk, which is a nice counter-balance to the spice.
