Leek and potato soup is a hearty, delicious soup that i don't think enough people know about. (The leeks will float so just grab them and shake off excess water before adding to the pan) Add the butter and oil to a large saucepan over a medium heat and add the onions and leeks. Sautee for 15 minutes. Add the remaining ingredients. Simmer for 40 minutes. Blend and season to your liking with salt and pepper.
