Matt is wrong about the Eagles. Even if they had agreed to carry the ring all that way, and managed to resist it's temptation, Sauron would have seen them coming from miles away and sent his forces to take it back. That was the point of the story; the eagles, Gandalf, even the armies of men, they could never bear the ring safely. Sauron expected the ring to be with the most powerful among the forces against him. He could never have expected that two short, humble, little hobbits could have succeeded where thousands before had failed, and that was his downfall.

Eagles aren't a plot hole. They weren't safe to go into mordor until the nazgul's flying mounts were killed.
