I've been a strict carnivore for almost a full year, and before that I was strict keto for 6 months. My health is amazing. Dr Chaffee is right that being strict is crucial. It's also good mentally to know that you have the discipline to be strict
I've been strict carnivore for 10 years now. I eat meat, eggs and drink water and feel absolutely amazing. I also run marathons and ultra-marathons.
Six months ago I switched from a Mediterranean diet (fish and fowl based proteins) to a strict animal based diet (primarily beef) in preparation for multiple surgeries at the VA. My goal was to reset cortisol and insulin, lower inflammation, and give my body the best foundation for healing. Since then I’ve had three major open surgeries: a right inguinal hernia (4 months ago) and a left inguinal hernia (2 months ago), both of which I recovered from in about one-third the usual time, and most recently a total knee replacement (2 weeks ago). By day 5 post-op, my flexion range of motion already matched the 6–8 week target, and by the end of week 2, I reached ~130° flexion (a level most people need 4–6 months to achieve) and was walking without mobility aids, something typically expected around 6 weeks. Anecdotal of course, but I believe the carnivore diet has been a key factor in accelerating my recovery far beyond the normal timeline.
I'm carnivore now. I started slowly. Stopped wheat first because it caused pain within about 20 minutes after ingesting. Then I stopped sugar... that was hard. The weight started falling off. Then I went to Keto and fasting and lost 50 lbs. Doctor was concerned because I was Keto. I did not need my HBP meds anymore, and I got off anti-inflammatory meds, which I had been taking for about 15 years. I quit drinking coffee and only drink water now. 😮 I've been carnivore for about a month now, and my arthritis pain is about 90% gone. Weight loss is slowly going down to combat a stall. I have also been drinking a lot of homemade bone broth for over a year. I'm never going back to eating carbs again. The pain isn't worth it. My eyesight is also improving. My eye doctor confirmed it.

I’m doing 80%carnivore. My health improved a lot, but now I’m facing new challenges and I can clearly see that it’s time to go strict. I’ve tried many times and couldn’t. I think my mind is always coming back to any kind of comfort zone when the day is too stressful or when I’m visiting my country (Brazil) with amazing culinary and fruits. It’s hard to break up with food but it’s also hard to leave with health issues. When I was doing 90% I was so much better. I’m watching carnivore videos as a reminder for my steps in this journey.
