Exploring Legendary Panita and Unique Toluca Sausages on a Mexico City Street Food Tour

Discover how two legendary Mexico City vendors masterfully prepare traditional cow stomach stew and artisanal, hyper-flavored sausages, providing essential tips on authentic seasoning methods.

Short Summary

  • Master the traditional seasoning ritual for authentic panita (stomach stew), involving hand-ground oregano and generous lime.
  • Sample diverse, colorful sausages (chiso and longaniza) imported from Toluca, known for unique flavor combinations like jalapeño and tamarind.
  • Recognize the specialized culinary skill required to properly prepare organ meats, ensuring a clean, savory final product.
  • Understand the key ingredient difference differentiating chiso sausages (almonds/peanuts) from standard longaniza.

This session tours two essential Mexico City street food institutions guided by local expert Peluche Torres. First, the team visits Rica Pancita Anita for a deeply savory, 70-year-old cow stomach and organ stew. Next, they explore Ricos Tacos Toluca, a stall specializing in unique, colorful sausages chiso and longaniza brought in from the state of Mexico. Learn the critical steps for maximizing flavor at both stops.

Description

Which sausage do you want to eat first? Today I’m hanging out with Peluche Torres (@PelucheTorres ) go on a small Mexican street food tour in Mexico City. Here are the places we ate: Rica Pancita Anita (https://maps.app.goo.gl/jDYLFBVMwT4RQdrN8) - First up we headed to Rica Pancita Anita to eat what’s called pacita, or menudo, a stew of cow stomach and organs boiled in chiles and achiote. It was delicious and a Mexican breakfast of champions. Ricos Tacos Toluca (https://maps.app.goo.gl/M4qz1juVWGM3YJuj8) - But the real highlight of the day was going to this unbelievable Mexican street food stall that specializes in sausages and longaniza from Toluca. They have half a dozen different sausages, and some very unique ones, like the green sausage loaded with jalapenos. It was amazing, and unlike any other tacos I’ve ever had. Thank you again to @PelucheTorres for taking me around, go check out his amazing videos!
