Turks usually stir the cold butter into the bulgur after the bulgur is cooked, as the change in temperature in the butter creates a certain effect that makes the bulgur even more creamy (vs cooking the butter along), and also not heating up the butter preserves the nutrients.
This was a go-to weeknight dinner for me for a long time, gotta love kanat
