Lao gan ma + huy fong garlic chili sauce = the cultural mashup condiment of gods.
Sambal oelek has been my go to chili condiment for over 45 years. But, I would love to see sambal blachan become popular.
Problem happens when you don't claim ownership of a brand then Walmart comes in and copies your product then sues you to stop usng it.
My local beloved cheese monger says you should absolutely let your cheese come to room temp. To prove this, he had samples of various cheeses both at room temp and at fridge temp. Without fail, the room temperature cheese was clearly superior. A big part of it was that letting it come to room temp releases more of the cheese's aromas, thus enhancing taste.
