The scene of Boromir and Faramir after they retake Osgiliath absolutely should have stayed in the original cut. Not only does it show that Boromir was Gondor’s white knight, it also shows how much he and his brother genuinely loved each other. So you absolutely feel that heartbreak that Faramir feels at the end of that scene when we see him in present day.

Aragorn is used to living in the wilderness eating whatever he can catch so you can only imagine how terrible that stew must have been.

In this scene, the armguards Aragorn took from Boromir get tangled in his orc mount, causing Aragorn to fall. When Aragorn falls, he arrives at Helm's Deep via a different route, allowing him to see the enemy's position. This is how Boromir contributes to the Battle of Helm's Deep.
