As a Turkish guy, I approve! Beyti is not traditionally made with chicken but it's ok here, I got the point. If you don't have access to Turkish pepper paste but have Korean gochujang, definitely use that instead. Could be even better than the real stuff. Also, gochujang is more shelf-stable as it's fermented
If you do it with a mince meat sauce (meatier ragu) you can also have a weeknight alternative to Turkish Mantı (Turkish dumplings) I do it all the time absolutely delicious. Serve with yogurt and melted butter + tomato paste.
I really like this kind of weeknight, one-pot recipes already packed with starch, protein, and veggies. I love middle eastern food, but I live alone and can't spend hours making shish kebabs and baba ghanoush.

I guess both Afghans and Turks do the “lazy manti/mantu pasta”. This looks along the same vein. I’m drooling already!
I made this tonight with but changed the pasta for rice as my girlfriend struggles to digest pasta. Really really tasty recipe! Instead of pasta water, I used 400ml chicken stock with half a teaspoon of corn flower for the starch and it worked a treat. I look forward to trying it with pasta next time I'm cooking just for myself.
