The car wash girl, Joy Harmon, has a great story. This may have been her last film. She started having kids after this film and began baking for them as they grew up. Her son eventually started an office job at one of the studios in Hollywood. She would send baked treats with him to work to share with his friends. Eventually, everyone at work realized that his Mom was the iconic Joy Harmon from Cool Hand Luke and she started to receive huge catering contracts from the local studios. She started Aunt Joy's Cakes and made a fortune before passing away a few months ago. Her bakery has a website with a video where she talks about Cool Hand Luke.
