As a cook and a human, if I make a mistake yes send it back. If you haven't had something before and don't like it it's on you and deal with it. I want the customer to be happy, but thats part of trying new things is sometimes you won't like it and it's not the restaurant to take the cost on your own personal preference.
I agree with Nicole on the expectation of where you are. All restaurants should provide quality, but the expectation changes depending where we are. $5 McDonald's vs $50 somewhere else
Another bartender argueed with me about making lemon drops, that they should be very sweet. That according to him, women like very sweet drinks. I was a new bartender (and a woman) and he was trying to bully me into making drinks his way. I made a lemon drop, and the sever told me the lady thought it was the best one she ever had. She would like another. The other bartender got all pissy and was like “wait till she tastes my drink!” he made his sickly sweet lemon drop…and SHE SENT IT BACK!!! I made it instead and gloated all night.
Josh wouldn't tell his parents he didn't like onions. It doesn't take a therapist to see why he has problems returning food that isn't safe. You deserve to have your needs met.

From someone who put herself through school waiting tables and then went into restaurant management, please tell your server if something is wrong with your food. I’ve worked at a number of restaurants and each one of them, regardless of the level of insanity of the chef, wanted the customer to leave full and happy. There is an old saying that goes, “If someone’s happy with their meal, they’ll tell one person. If they’re unhappy, they’ll tell 10.”
the "He asked for no pickles" dynamic
as a server, the nicer you are about it, the more i want to help. one time, my table flagged me over and were so apologetic telling me that their chicken was raw. i couldn’t believe how nice and calm they were. you better believe i went above and beyond to correct it quickly and make sure they were taking care of. ofc im going to help you out regardless, but PLEASE just be nice! it makes such an insane difference in our day
As a server, I want the customer to get what they ordered and enjoy it because they are paying for it and their experience determines my tip. I feel like some people are scared to ask, but if I don't see you eating or if you appropriately ask to send back food, then I'll happily replace or comp a meal. Just has to be reasonable.
That Fernet bartender bit is totally legit, lol. I love it, though. Ask for Fernet with a chaser of gingerbeer. Fricken delightful. The two really go well together.
