Last Story: Naw i’m gunna be honest, if i’m house sitting for someone, i 10000% wouldnt open and finish an entire bottle of wine without asking if it was okay first. Op is NTA

I gotta disagree with the last story. If you say help yourself to anything in the kitchen, that in no way includes unopened alcohol. And honestly shouldn't include any alcohol if you're there to look after the place.

Last story: If someone told you help yourself to the garage, and you drive away in their car, you’re getting the cops called on you for grand theft auto. Bad example. The wine bottle completely depends on how it was stored. Was it in plain view on the countertop? If so, then yeah that’s OPs fault for not being clear. If it was stashed somewhere in the pantry, hidden away, then yes the house-sitter was rude and TA. In that case he should have texted and asked beforehand if it was okay. There IS a common sense of courtesy when it comes to “help yourself” when in someone else’s home. That includes not downing an entire bottle of wine, or in fact any alcohol without clarification. It can get expensive very quickly.

First Story, NTA: What??? OP's mom says OP is acting like a tenant instead of a daughter....but she is treating OP like a tenant instead of a daughter. She wants OP to give her half of her savings for no reason other than OP has too much money saved. OP needs to take that as a sign to move out

Last story, common respect and decency says you help yourself to basic things, not expensive things that could be special. "Help yourself" means have a cookie, have a drink, use my tools, but dont touch my expensive stuff. Common sense.
