My conclusion also coincides with Josh in that dessert is less of a food category and more of a culinary ritual. I say this because sweets can be enjoyed in a lot of contexts where it is not the end of a meal, but when they are consumed as the cap of meal they become part of the dessert ritual.

If I were served cookies as a dessert, I think I might even be "offended." I want a real dessert-- cake, pie, ice cream, etc. Cookies are akin to crackers. Maybe they're the bread course?
