Third generation potato farmer here. Potatoes are rinsed after they are harvested. They are rinsed off as they are going to the grading tables. This is so that the graders can see what is a dirt clod, a rock, or blighted potato easier. This step takes place after they are harvested, but before they are loaded into either semi trailers or cold storage for the winter. I assume they are rinsed off one more time after they come off the semi trucks, but I never witnessed that part of the process. However, it is just dirt. I have cooked potatoes straight out of the field and lived to tell the tale. You rinse them off and it is fine. It is still good practice to rinse/scrub them off at your house to get any bits of dirt off that got missed. It is good practice to rinse off ALL produce you bring home before consuming.
