Please, please watch the last movie; it wraps up the story in a way that finally feels like a satisfactory ending to the series, and some things in it are echoed in the reboot series, which probably can't be fully appreciated without completing the first series. It's true that the production values deteriorate somewhat, but the story more than makes up for that. The Tim Burton version doesn't work, despite some occasional nice moments, and is worth seeing for comparison only, if at all.

Please don't stop now! You need the complete experience that those of us growing up watching these movies got. You're almost to the finish line, and I think you will be glad you watched them all. It is not even the worst of them.

I join the chorus of people telling you not to skip the final film. It will add a lot to your understanding of the original series overall, and it will have a lot of themes and moments that will be paralleled in the remakes (particularly Dawn of the Planet of the Apes).
