As a native japanese i personally attribute it to daily high qaulity green tea intake like matcha, sencha and gyokuro as well as mindful eating and lots of walking

Most of the 'Japanese weight paradox' comes down to less sugar + much smaller portion sizes (which is a cultural thing really) and most importantly, take a look at school lunches and nutrition; the kids get a great start in life and it stays that way for the 12yrs of their school career and this is a *HUGE* foundation for health.
