Story 1: NTA. In fact, not only should you countersue for the cost of the cake, you should also include court costs in the counterclaim as well. If she wants to take you to court, then she should pay for it.
Second Story, NTA: So OP went through a lot of abuse from his step-mom's daughter and this man still chose his marriage? Why should OP reconcile with him? He clearly doesn't view OP as important as his very rushed marriage with his new wife. OP's dad burned that bridge when he was complacent with what was going on with OP and his step-sister
Story 2: You know things are going to be rough when the op says "His wife/her husband" and not "my stepmom/stepdad"
Only 3/5 on that second one? No way, that dad's at least a 4/5, cause child abuse, debatable kidnapping (since he never told OP's mom where he went) and child endangerment in some cases.
Story 2: good dads don’t put everything over their kids and guilt them into taking abuse and demanding free labor. And real remorse means respecting OP’s boundaries and acknowledging what they did that led to this. To quote Bojack Horseman S1 E7 telescope , “ you have to live with the sh*ty thing you did, I know that it is never going to be OK”.
Third story: NTA. If they went so soon to demand parental rights it means they wanted to override OP as a mother, basically they wanted to take away OP's kid by early brainwashing.
Story 1: Counter-sue for emotional distress, cost of the cake and getting a new one, and legal fees for the frivolous lawsuit. So 65 x 2=130 for the cake. Emotional distress would be $1000, and legal fees would start at $100, but would go up as the lawsuit continues. So about $1230 for the counter-suit. Play the petty game with those who sue for things like this.

OPs dad and stepmom are terrible, full stop. She only got married to have help, and he was willing to put his son into the situation. Even before the stepsister got bad, Op's dad was willing to put his son into a situation where he only had a curtain to sleep behind. And it doesn't sound like either of them ever tried to help stepsister, and just expected her to magically get in line. At eleven, she was doing drugs. That's insane to me. Lindsey got married in a rush and made the situation so much worse for her daughter who was probably already struggling and Op's dad was willing to sacrifice op to his stepdaughter just so he could be married.
Story 2: father put his happiness first, so he put his son into a house where the wife treated him as help, one of her children was a violent addict and another was gravely ill. So he had no privacy, no security, and no adult support. Now when OP puts himself first the father is playing the victim. Eff him
