Scientists Compared Butter vs Seed Oil Head-to-Head (the results surprised me)
Navigating Saturated Fat vs. Seed Oil Evidence: Short-Term Gains vs. Long-Term Oxidation Risk
Review the latest research comparing butter and seed oils to clarify short-term biomarker improvements versus long-term risks related to fat oxidation. Determine how individual metabolic health and caloric status dictate the optimal fat consumption strategy.
Short Summary
- Short-term studies often show polyunsaturated fats (PUFAs) improve liver health markers like liver fat accumulation and inflammation.
- Consuming excess saturated fat, particularly when overfed, significantly increases liver triglycerides through fat mobilization, not just direct synthesis.
- Long-term risk appears linked to the high accumulation of linoleic acid in human fat tissue, which predisposes LDL particles to oxidation.
- Metabolic context is crucial: activity levels dictate whether saturated fat intake contributes positively (via energy use) or negatively (via organ deposition).
This discussion moves beyond nutritional dogma, examining trials that pit butter against vegetable oils. We analyze why PUFAs rapidly improve liver health in some contexts, but also explore the underlying evidence suggesting that high consumption of specific PUFAs like linoleic acid creates long-term risks via oxidation pathways. Understanding these competing factors helps tailor fat intake to your individual metabolic state.

i always use butter for cookin' eggs...
I never use veg oil, the oil doesn't come from veggies like the name implies. Butter is awesome.
Good one, it's grass fed butter overall that's better for you, but NOT when you are OVERFED, i.e., consuming an additional 1000 calories over your normal base caloric intake AND on a SAD diet.
Seed oils are usually always a marker for shitty foods.
Ok, that was confusing. I didn't understand the words he said.
One of the best explanations between saturated fats and seed oils that I have heard so far.
Thanks Thomas!!
Thank you Thomas
very good, important info. And even the start was nice :))
Excellent!! Ty
