The next obvious test is to glue a bunch of coffee beans together into one big bean and see if that roasts better.

James! Chemist here. One of the major challenges of roasting these green bean pieces is going to be oxidation. While heat can be transferred from one molecule to another, all the way down to the center of the bean, oxidation can only occur at the surface. With a whole bean, that's not a problem. You just oxidize the outside and heat transfers to the inside. When you break it up into pieces before roasting now the grounds have a lot more surface area for oxidation to occur from the hot air within the roaster. The increased oxidation would destroy a lot of aromatics that give coffee its flavor. It would be difficult to get around this problem because you need oxygen to have a flame. Essentially, you would need a nitrogen environment inside the roaster, and an oxygen environment for the burner. Nitrogen can't oxidize anything so the green bean pieces wouldn't get oxidized but they would get roasted from the hot nitrogen.
Hi, I roast triage bean bags for a living. Happy to consult/collab on a future video with you, but the secret is to roast them under high pressure. That helps keep the volatile compounds in there better, but you have to do a few special things to avoid it burning or losing too much moisture.
