My favorite poached egg breakfast is two soft poached eggs on top of bobs red mill rolled oats with shredded sharp cheddar and black bean salsa. It's so satisfying!

some interesting ideas to experiment with (baked fridge potatoes, overnight oats, sweet potato dish, etc) for people who are not on strict keto! Mayhaps starting with tiny potatoes in the air fryer...
