I just finished eating a curry made with konjac noodles, mushrooms, snow peas , red peppers and a bunch of shrimp. Used Thai curry paste, coconut milk, some chilis with a bit of nut butter. It was a huge bowl and delicious. Even with the fats it was a lower calorie dinner. Easy to adapt to desired amount.
I would add zucchini is a pasta alternative as well. I dont bother making the 'spaghetti' out if it, but I will pour my homemade meat sauce over 'half-moon' slices, with a little Romano cheese. Yum!
A 1KG (2.2lb) bag of mixed vegetables has 200-400 calories depending on the veges. And is a huge source of potassium.
My digestion absolutely distains shirataki noodles. It will protest unceasingly.
