This is all well and good regarding carbohydrates. Agree on seed oils. But as an RN following a ketogenic diet for 10+ years - I prefer ketones as a major fuel source. He may feel great on high carbs but I suspect he may be suffering from the illusion of youth and can obviously process carbs well at his age. Good - no problem. But at 65, I will stick to nutritional ketosis and intermittent fasting. One size does not fit all. Check back with him in 10 years.

From stable nitrogen isotope testing of the long bones of ancient humans, from all around the world, going back hundreds of thousands of years, it is evident that humans ate a diet comprising 80% of the muscle meat of ruminant animals, with the remaining 20% coming from stringy tubers and some fruits and berries when they were briefly in season. Agriculture came in between eight and twelve thousand years ago, a millisecond in evolutionary terms. With the advent of agriculture, humans lost five inches in height, males lost eleven percent of brain size and females lost seventeen percent. Jawbones narrowed, and tooth crowding became an issue which remains to this day. All of this proves that humans are obligate carnivores. Our stomach is more acidic than that of a lion, since we started on our carnivore journey as scavengers. It is a nonsense to claim that humans are adapted to eat carbs. Most of the fruits and vegetables eaten today bear little resemblance to the ancient plants they were derived from. All plants contain defensive chemicals, since plants can't run away from a predator. If you walk into a forest, and just start eating the plants that you find there, you will likely die. The plants that humans do eat have been bred to be somewhat tolerated, but that is very different from being positively indicated as part of a human diet. Whilst all animals have a specific diet, we are led to believe that humans need to eat the rainbow, and also that everyone is different.

Again (I've said this before - you have a GREAT interview style, with a perfect balance of asking, summarizing, challenging and shutting up. (And good, thoughtful speed 👍😏). And find new people for us. PS I can (for 4.5 years carni with sharpened sense of smell) smell seed oils in fast food places from a long way away - it's a disgusting stench.

I think Dr. Ben Bikman, a top scientist in the field, would disagree in large measure. The fact remains that carbs rapidly convert to glucose which triggers insulin release (for fat storage by the mTOR path-way), in-turn, triggering other processes leading to insulin resistance (if chronic). This can be pragmatically confirmed by deceasing the chronic release of insulin, as hyperinsulinemia, simply be reducing carb intake to lower values with keto, ketovore, and carnivore dieting.
