Paul, itβs not just that Parmigiano-Reggiano is Made in Ital, it is Made in a confined area in Emilia-Romagna region, cows only eat local grass (fresh or dry), and if antibiotic is used the cow is removed from production until there are no traces in the milk. I doubt that the Wisconsin Parmesan can arrive to 24 months of aging, let alone 36 or more (I have tasted 10 years old parmigiano-reggiano). The taste has to do with the microbiota of the cow and the unique process, itβs a whole ecosystem preserved to be able to make parmigiano taste like that. The aging process is super tricky and has to be checked constantly. I just wanted to specify, itβs not just a provenance matter, itβs a thousand year of expertise and tradition, itβs passion to make the best cheese in the world :)
