This Is The Cleanest Meat In America (Is it even worth it?)
Touring Austin's Top-Tier Butcher Shop for Optimal Animal-Based Sourcing
Discover criteria for selecting superior meat, learn why slow-growth, air-chilled poultry is vital, and see how local sourcing beats major retailers on chemical contamination.
Short Summary
- Evaluate produce risks like oxalates and isothiocyanates, often outweighing benefits in greens.
- Prioritize Red Bro, air-chilled chicken over fast-growing Cornish breeds contaminated by water chilling.
- Select grass-fed Wagyu ground beef for an affordable, nutrient-dense staple, avoiding plasticizers found in store-bought meats.
- Identify proper sourdough bread (no added folic acid) and understand the superior quality of specialized animal products like beef cheek (high taurine) and thymus.
This video guides viewers through an exemplary butcher shop in Austin, Texas, demonstrating specific quality markers for meat and poultry. Apply these standards to upgrade your animal-based diet quality, focusing on sourcing transparency and avoiding common food additives like synthetic folic acid and plastic contaminants.

Farmers Market, less expensive than hospital lol
I live in southern Ohio. I’m connected with a bunch of local beef farmers, I buy grass fed beef that is locally raised and processed. Ground beef is 80/20, $6 a pound. Steaks are $12 a pound. I buy a shit load of it and eat it right out of my own freezer. All of it’s from my own state, most of it’s within an hour and a half of my house.
Bread made with freshly milled flour is the way to go. You have to make your own. Freshly milled flour has the bran and the germ.
Cosmic crisp apples.
What I love about living in Texas is If I want I can go practically anywhere and buy chicken, eggs, or a cow from a local farmer. Have it butchered and get meat where I know exactly where it comes from. I don't really have the funds to do that lol but we have markets that still have butchershops and the meat isn't as bad as other places that is somewhat local
fyi all Bell & Evans chicken is 100% air-chilled. This is a key part of their process, which they state eliminates the need for chlorinated water and helps lock in natural juices and flavor.
Had no idea about chicken that way thanks
@paulsaladinomd You should do this for every region of the US. Would be awesome to promote these clean butchers across the country.
The “promised land” - love it! I was born and raised in Austin and didn’t even know this shop existed. Living on the outskirts of Austin now and as a carnivore I’m going to make this my next shopping stop! Thank you for sharing this!!!
A lot of great info. Thank you!!!
