My mom was born in Italy, and a lot of what my Italian relatives grew up eating was various kinds of salami! So many of them live to be in their late 90's and early 100's! They also use a lot of EVOO, cheese, and fish! Lactic acid fermentation is good for meat! We do have a good deal of good salami and hams here too, just learn to read the ingredients properly. Making your own is not that hard…
You need to try South African Biltong and Droer wors . It's the best dried meat globally, hands down.

I wish more jerky companies would not add sugar and sodium nitrate. Sure there are some, but so many add these.
Concerning non-dried meats, we do not eat those in insolation, but rather with other foods like starchy potatoes and biscuits, which can potentially skew any beneficial result we are hoping for. However, we {typically} eat dried meats in isolation, so there is nothing to conflate the effects of consumption. 🙂
